These easy-to-make Egg Muffins with Spinach and Feta are a perfect, protein-packed breakfast option or snack. Filled with healthy spinach, creamy feta, and eggs, they're tasty and satisfying.


Ingredients

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • Salt and pepper to taste
  • Non-stick cooking spray


Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Spray a muffin tin with non-stick cooking spray.
  2. In a large bowl, whisk together eggs, milk, salt, and pepper.
  3. Add chopped spinach and crumbled feta cheese to the egg mixture and stir to combine.
  4. Pour the mixture into the prepared muffin tin, filling each cup about two-thirds full.
  5. Bake in the preheated oven for 20-25 minutes, or until the egg muffins are set and lightly golden on top.
  6. Remove from oven and let cool for a few minutes before removing from the muffin tin. Serve warm or store in the refrigerator for later.
