Ingredients
- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup milk
- Salt and pepper to taste
- Non-stick cooking spray
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Spray a muffin tin with non-stick cooking spray.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- Add chopped spinach and crumbled feta cheese to the egg mixture and stir to combine.
- Pour the mixture into the prepared muffin tin, filling each cup about two-thirds full.
- Bake in the preheated oven for 20-25 minutes, or until the egg muffins are set and lightly golden on top.
- Remove from oven and let cool for a few minutes before removing from the muffin tin. Serve warm or store in the refrigerator for later.
