Cottage Cheese Pancakes
Description
These Cottage Cheese Pancakes are wonderfully fluffy and packed with protein, made using cottage cheese, eggs, and oats. Served with fresh fruit and a drizzle of honey, they're the perfect start to any day.
Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 1/2 cup rolled oats
- 1 tablespoon honey
- 1/2 teaspoon vanilla extract
- Oil for cooking
- Fresh fruits for serving
Instructions
- In a blender, combine the cottage cheese, eggs, oats, honey, and vanilla extract. Blend until smooth.
- Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup of batter for each pancake onto the hot skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Serve the pancakes warm topped with fresh fruits and an extra drizzle of honey.
