Ingredients

  • 3 large bell peppers, any color
  • 1 lb ground turkey
  • 1 cup cauliflower rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 cup shredded cheese (optional for topping)
  • 2 tbsp olive oil

Instructions

  1. Prepare the Peppers: Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes. Set aside.
  2. Cook the Filling: Heat olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until translucent. Add the ground turkey and cook until browned. Stir in the cauliflower rice, diced tomatoes, salt, pepper, and paprika. Cook for an additional 5 minutes.
  3. Stuff the Peppers: Spoon the turkey and cauliflower mixture into the hollowed-out peppers. Top with cheese if using.
  4. Bake: Place the stuffed peppers in a baking dish and cover with foil. Bake in the preheated oven for 30 minutes. Remove the foil and bake for another 10 minutes or until the peppers are tender and the cheese is bubbly.
  5. Serve: Serve hot, garnished with fresh herbs if desired.
