Ingredients

For the crust:

  • 1 cup crushed whole-grain biscuits
  • 1/4 cup rolled oats
  • 1/4 cup melted coconut oil

For the filling:

  • 2 cups low-fat cream cheese
  • 1 cup Greek yogurt
  • 3/4 cup vanilla protein powder
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 2 eggs
  • Juice of one lemon


Instructions

  1. Preheat your oven to 325°F (163°C). Combine crushed biscuits, rolled oats, and melted coconut oil in a bowl; mix until well incorporated. Press the mixture into the bottom of a springform pan to form a firm, crispy crust.
  2. In a large mixing bowl, blend the cream cheese, Greek yogurt, protein powder, honey, vanilla extract, and lemon juice until smooth.
  3. Add eggs one at a time, beating just enough to incorporate into the mixture without overmixing.
  4. Pour the filling over the prepared crust and smooth the top with a spatula.
  5. Bake for 50 minutes, or until the center is set but slightly wobbly. Turn off the oven and let the cheesecake cool inside for 1 hour with the door slightly open.
  6. Refrigerate for at least 4 hours, or overnight, before serving.
