These Banana Protein Muffins are moist, fluffy, and packed with nutrition. Made with bananas, almond butter, eggs, and vanilla protein powder, they're the perfect snack for a quick energy boost, especially after a workout.


  • 3 ripe bananas, mashed
  • 1/2 cup almond butter
  • 3 large eggs
  • 1/2 cup vanilla protein powder
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Pinch of salt


  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the mashed bananas, almond butter, eggs, honey, and vanilla extract. Mix until smooth.
  3. Add the protein powder, baking soda, and salt to the banana mixture and stir until just combined.
  4. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  5. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  6. Let the muffins cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
