Ingredients:
- 200g fresh salmon fillet, cubed
- 100g fresh red tuna fillet, cubed
- 1 cup cooked brown rice
- 3/4 avocado, sliced
- 1/2 cup diced cucumber
- 1/2 cup shredded carrots
- 1/4 cup edamame beans
- 1/4 cup green peas (added)
- 2 tablespoons sliced green onions
- 2 tablespoons sesame seeds (increased for additional topping)
- 3 tablespoons soy sauce
- 1.5 teaspoons sesame oil
- 1.5 teaspoons rice vinegar
- Optional: mango cubes and seaweed salad for extra toppings
Instructions:
- Marinate the Fish: In separate bowls, combine salmon and tuna each with 1.5 tablespoons of soy sauce, sesame oil, and rice vinegar. Marinate for at least 15 minutes in the refrigerator.
- Prepare the Rice: Spoon cooked brown rice into bowls as the base.
- Assemble the Poke Bowl: Arrange marinated salmon and tuna, avocado slices, diced cucumber, shredded carrots, edamame beans, and green peas over the rice.
