  • 2 chicken breasts, grilled and sliced
  • 1 cup quinoa, cooked
  • 3 cups mixed greens (such as arugula, spinach, and romaine)
  • 1 avocado, diced
  • For the Lemon Vinaigrette:
    • 1/4 cup olive oil
    • Juice of 1 lemon
    • 1 tablespoon honey
    • Salt and pepper to taste
  • Optional garnishes: sliced almonds, cherry tomatoes


  1. Prepare the quinoa according to package instructions and let it cool.
  2. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper to create the vinaigrette.
