Ingredients

Instructions

  1. In a saucepan over medium heat, combine blackberries, water, and lavender flowers. Cook until the blackberries are soft and begin to break down, about 10 minutes.
  2. Remove from heat and let the mixture cool slightly. Sweeten with honey while still warm.
  3. Blend the mixture until smooth, then strain through a fine mesh sieve to remove the seeds and lavender pieces.
  4. Pour the strained liquid into a shallow dish and freeze for about 2 hours, until it begins to firm up.
  5. Scrape the semi-frozen mixture with a fork to break up ice crystals, then return to the freezer.
  6. Repeat the scraping process every 30 minutes for about 2-3 more hours until the sorbet is smooth and fluffy.
  7. Serve the sorbet immediately or store in an airtight container in the freezer for up to two weeks.
