This Chicken and Chickpea Curry blends tender chicken breast, protein-packed chickpeas, and aromatic spices into a rich, flavorful curry. Simmered with tomatoes and coconut milk, it's the perfect comforting dish to serve over steamed rice or with warm naan.


  • 1 pound chicken breast, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) coconut milk
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish


  1. In a large skillet, heat olive oil over medium heat. Add diced onions and cook until translucent.
  2. Stir in garlic and ginger, cooking for another minute until fragrant.
  3. Add curry powder, cumin, paprika, and turmeric. Stir to combine.
  4. Add diced chicken breast to the skillet and cook until browned on all sides.
  5. Pour in the diced tomatoes and coconut milk. Stir in chickpeas.
  6. Season with salt and pepper to taste, and simmer the curry for 15-20 minutes until the chicken is cooked through and the sauce has thickened.
